Description

Chocolate Protein Muffins are a delicious and nutritious treat that satisfies both your sweet cravings and your body’s need for protein. These muffins combine the rich, decadent flavor of chocolate with the health benefits of protein, making them perfect for breakfast, a snack, or even dessert.

Ingredients

Scale
  • 1 cup whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup protein powder (chocolate or vanilla)
  • 1 cup unsweetened applesauce
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • Optional: agave syrup, stevia, or banana substitutions

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your muffin pan with liners or non-stick spray.
  2. In a medium bowl, whisk together whole wheat flour, cocoa powder, protein powder, baking soda, baking powder, and salt.
  3. In another large bowl, mix unsweetened applesauce, honey or maple syrup, eggs, milk, and vanilla extract. Whisk until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Fill the muffin pan about two-thirds full with batter. Optionally, sprinkle some chocolate chips on top.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Be careful not to overmix the batter to avoid dense muffins.
  • Ensure your oven is preheated for even baking.
  • For an extra chocolate flavor, add a teaspoon of espresso powder to the dry ingredients.
  • If using a different sweetener, adjust to taste and baking time as needed.
