  • 3 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light or dark brown sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 and 1/3 cups buttermilk, at room temperature

Instructions

  1. Prepare the ganache: Place chopped chocolate in a medium heatproof bowl. Heat heavy cream in a small saucepan until it begins to simmer. Pour cream over the chocolate and let sit for 2–3 minutes, then stir until smooth. Set aside half (about 3/4 cup) at room temperature to thicken for layering, and refrigerate the rest for topping.
  2. Preheat oven to 350°F (177°C) and grease a 10-inch Bundt pan generously.
  3. Mash bananas in a bowl. In another bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
  4. In a large mixing bowl, beat butter until smooth and creamy. Gradually add both sugars and beat for 2 minutes. Add eggs one at a time, mixing well after each, then add vanilla.
  5. Add mashed bananas and mix until combined. With mixer on low, alternate adding the dry ingredients and buttermilk in three parts, mixing just until incorporated.
  6. Pour one-third of the batter into the prepared Bundt pan. Drizzle half of the reserved ganache over the batter and gently swirl with a knife. Repeat with another third of batter, remaining ganache, and final third of batter, swirling again.
  7. Bake for 60–75 minutes or until a toothpick inserted in the center comes out clean or with moist crumbs. Let the cake cool in the pan for 2 hours before inverting onto a wire rack to cool completely.
  8. Warm the remaining ganache slightly until pourable. Drizzle over the cooled cake and serve.
