- 2 teaspoons pure vanilla extract
- 1 and 1/3 cups buttermilk, at room temperature
Instructions
- Prepare the ganache: Place chopped chocolate in a medium heatproof bowl. Heat heavy cream in a small saucepan until it begins to simmer. Pour cream over the chocolate and let sit for 2–3 minutes, then stir until smooth. Set aside half (about 3/4 cup) at room temperature to thicken for layering, and refrigerate the rest for topping.
- Preheat oven to 350°F (177°C) and grease a 10-inch Bundt pan generously.
- Mash bananas in a bowl. In another bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
- In a large mixing bowl, beat butter until smooth and creamy. Gradually add both sugars and beat for 2 minutes. Add eggs one at a time, mixing well after each, then add vanilla.
- Add mashed bananas and mix until combined. With mixer on low, alternate adding the dry ingredients and buttermilk in three parts, mixing just until incorporated.
- Pour one-third of the batter into the prepared Bundt pan. Drizzle half of the reserved ganache over the batter and gently swirl with a knife. Repeat with another third of batter, remaining ganache, and final third of batter, swirling again.
- Bake for 60–75 minutes or until a toothpick inserted in the center comes out clean or with moist crumbs. Let the cake cool in the pan for 2 hours before inverting onto a wire rack to cool completely.
- Warm the remaining ganache slightly until pourable. Drizzle over the cooled cake and serve.
