Description

  • 113g unsalted butter, softened to room temperature
  • 1 tablespoon vegetable oil
  • 100g granulated sugar
  • 100g packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 156g all-purpose flour, spooned and leveled
  • 45g unsweetened natural cocoa powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • For the frosting:
  • 170g unsalted butter, softened to room temperature
  • 240g confectioners sugar
  • 30g unsweetened natural or Dutch process cocoa powder
  • 45ml heavy cream or milk, slightly warm
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • 43g sprinkles (optional)

Instructions

  1. Cream together the softened butter and vegetable oil using a mixer for about 2 minutes until light and fluffy.
  2. Add granulated sugar and brown sugar, and beat for another 2–3 minutes. Mix in the egg and vanilla extract until combined.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Gradually mix the dry ingredients into the wet mixture on low speed until just combined. Do not overmix.
  5. Cover the dough and refrigerate for at least 2 hours.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Let dough sit for 5 minutes at room temperature. Scoop and roll dough into balls, placing them 2-3 inches apart on baking sheets.
  8. Bake for 12–13 minutes until edges are set. Cool on the baking sheet for 10 minutes, then transfer to a wire rack.
  9. Prepare the frosting by beating softened butter until creamy. Gradually add confectioners sugar and cocoa powder, mixing on low speed.
  10. Slowly add warm cream or milk, vanilla extract, and salt. Beat until smooth and fluffy (2–3 minutes).
  11. Once cookies are cool, frost with a spatula or knife and decorate with sprinkles as desired.
