- 113g unsalted butter, softened to room temperature
- 1 tablespoon vegetable oil
- 100g granulated sugar
- 100g packed light or dark brown sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 156g all-purpose flour, spooned and leveled
- 45g unsweetened natural cocoa powder
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- For the frosting:
- 170g unsalted butter, softened to room temperature
- 240g confectioners sugar
- 30g unsweetened natural or Dutch process cocoa powder
- 45ml heavy cream or milk, slightly warm
- 1 teaspoon pure vanilla extract
- Pinch of salt
- 43g sprinkles (optional)
Instructions
- Cream together the softened butter and vegetable oil using a mixer for about 2 minutes until light and fluffy.
- Add granulated sugar and brown sugar, and beat for another 2–3 minutes. Mix in the egg and vanilla extract until combined.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture on low speed until just combined. Do not overmix.
- Cover the dough and refrigerate for at least 2 hours.
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Let dough sit for 5 minutes at room temperature. Scoop and roll dough into balls, placing them 2-3 inches apart on baking sheets.
- Bake for 12–13 minutes until edges are set. Cool on the baking sheet for 10 minutes, then transfer to a wire rack.
- Prepare the frosting by beating softened butter until creamy. Gradually add confectioners sugar and cocoa powder, mixing on low speed.
- Slowly add warm cream or milk, vanilla extract, and salt. Beat until smooth and fluffy (2–3 minutes).
- Once cookies are cool, frost with a spatula or knife and decorate with sprinkles as desired.
Notes
- Always measure flour correctly using the spoon-and-level method.
- Chill the dough to prevent cookies from spreading too much.
- Frost only after cookies have completely cooled.
- Add a pinch of espresso powder for deeper chocolate flavor.
