Instructions
- Preheat your oven to 350°F (175°C). Blind-bake the pie crust for 10-15 minutes until set but not browned. Let it cool.
- In a saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. Gradually add milk, whisking until smooth. Heat over medium, stirring continuously until the mixture thickens and bubbles (about 5-7 minutes).
- Remove from heat and stir in butter, vanilla, and optional semi-sweet chocolate until smooth.
- Pour the chocolate filling into the cooled crust. Smooth the top and let it cool at room temperature for 30 minutes, then refrigerate for at least 4 hours.
- Whip the cream with powdered sugar and vanilla until soft peaks form. Top the pie with the whipped cream before serving.
