  • 1 cup sour cream, at room temperature
  • 1/4 cup milk, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup chopped fresh strawberries
  • 3/4 cup semi-sweet chocolate chips
  • 4 ounces semi-sweet chocolate bar, coarsely chopped
  • 1 teaspoon vegetable oil (optional)

Instructions

  1. Preheat your oven to 425°F (218°C) and prepare a 12-count muffin pan.
  2. In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk the egg, then add sugar and melted butter until well combined. Stir in sour cream, milk, and vanilla extract.
  4. Pour wet mixture into dry ingredients, combining gently with a spatula. Fold in strawberries and chocolate chips.
  5. Fill muffin liners to the top with batter and bake at 425°F for 5 minutes.
  6. Reduce temperature to 350°F (177°C) and continue baking for another 17-19 minutes until a toothpick comes out clean.
  7. While cooling, melt the chopped chocolate in a microwave-safe bowl, stirring every 15 seconds.
  8. Drizzle melted chocolate over muffins while warm.
