Ingredients
Scale
- 2 cups shredded coconut (sweetened or unsweetened)
- 1 cup sweetened condensed milk
- 2 cups semi-sweet chocolate chips
- 2 tablespoons coconut oil
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt. Stir until mixed well.
- Press the coconut mixture into the prepared pan and bake for 20 minutes until golden brown. Let it cool completely.
- Melt the chocolate and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Once the coconut layer is cool, pour the melted chocolate over it, spreading evenly with a spatula.
- Refrigerate the bars for 30 minutes until the chocolate is set. Cut into squares or rectangles.
Notes
- Ensure not to overmix the coconut mixture to avoid a tough texture.
- Keep an eye on the coconut layer while baking to prevent burning.
- For a richer flavor, add chocolate chips or chopped nuts to the coconut mixture before baking.
