Delicious homemade Chocolate Chip Ice Cream Sandwiches combining chewy cookies and creamy vanilla ice cream for a perfect treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup unsalted butter, melted and cooled
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1/2 tsp kosher salt
  • 1/2 cup mini semisweet chocolate chips
  • 2 cups vanilla ice cream, slightly softened

Instructions

  1. Heat the all-purpose flour in 15-second increments until it reaches 160°F, then let it cool.
  2. Whisk melted butter, brown sugar, granulated sugar, and vanilla extract until smooth. Add cooled flour and mix. Stir in chocolate chips.
  3. Press dough evenly into a 16 x 8-inch rectangle on parchment-lined baking sheet. Freeze for 15 minutes.
  4. Line an 8 x 8-inch pan with parchment paper. Cut dough in half crosswise and place one half into pan. Spread softened ice cream evenly on top.
  5. Place remaining dough half over ice cream layer, press gently, then freeze for at least 2 hours or up to 2 months.
  6. Remove from freezer, lift out using parchment, and cut into 16 squares to serve.
