- 1 1/2 cups all-purpose flour
- 3/4 cup unsalted butter, melted and cooled
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 tsp pure vanilla extract
- 1/2 tsp kosher salt
- 1/2 cup mini semisweet chocolate chips
- 2 cups vanilla ice cream, slightly softened
Instructions
- Heat the all-purpose flour in 15-second increments until it reaches 160°F, then let it cool.
- Whisk melted butter, brown sugar, granulated sugar, and vanilla extract until smooth. Add cooled flour and mix. Stir in chocolate chips.
- Press dough evenly into a 16 x 8-inch rectangle on parchment-lined baking sheet. Freeze for 15 minutes.
- Line an 8 x 8-inch pan with parchment paper. Cut dough in half crosswise and place one half into pan. Spread softened ice cream evenly on top.
- Place remaining dough half over ice cream layer, press gently, then freeze for at least 2 hours or up to 2 months.
- Remove from freezer, lift out using parchment, and cut into 16 squares to serve.
