- 2 large eggs
- 1/2 cup pure maple syrup
- 1/2 cup unsweetened applesauce
- 1/2 cup almond butter
- 3 and 1/4 cups old-fashioned whole rolled oats
- 1/3 cup ground flaxseed
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 3/4 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 12-count muffin pan with nonstick spray or cupcake liners.
- In a large mixing bowl, combine milk, eggs, maple syrup, applesauce, almond butter, and vanilla extract; whisk until smooth.
- Add oats, flaxseed, baking powder, cinnamon, and salt; stir until combined.
- Fold in the chocolate chips.
- Fill each muffin cup 3/4 full with the oatmeal mixture.
- Bake for about 28 to 30 minutes until tops are golden and a toothpick comes out clean.
- Let cool for 5 to 10 minutes in the pan, then on a wire rack before serving.
Notes
Serve warm for breakfast or a snack, topped with yogurt or maple syrup. Store in an airtight container for up to a week in the fridge.
