  • 1/2 cup pure maple syrup

  • 1/2 cup almond butter
  • 3 and 1/4 cups old-fashioned whole rolled oats
  • 1/3 cup ground flaxseed
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 12-count muffin pan with nonstick spray or cupcake liners.
  3. In a large mixing bowl, combine milk, eggs, maple syrup, applesauce, almond butter, and vanilla extract; whisk until smooth.
  4. Add oats, flaxseed, baking powder, cinnamon, and salt; stir until combined.
  5. Fold in the chocolate chips.
  6. Fill each muffin cup 3/4 full with the oatmeal mixture.
  7. Bake for about 28 to 30 minutes until tops are golden and a toothpick comes out clean.
  8. Let cool for 5 to 10 minutes in the pan, then on a wire rack before serving.

Notes
