  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease the muffin cups.
  2. In a large bowl, combine the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir to combine.
  3. In another bowl, whisk the eggs, buttermilk, vegetable oil, and vanilla extract. Add the wet ingredients to the dry mixture and stir until just combined. Fold in the chocolate chips.
  4. For the cheesecake filling, beat cream cheese and sugar until smooth. Add egg, vanilla extract, and sour cream (if using), and mix until creamy.
  5. Fill each muffin cup with a small amount of muffin batter. Add a dollop of cheesecake filling, then top with more muffin batter.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean. Let the muffins cool for 5 minutes in the tin, then transfer to a wire rack to cool completely.
