Description

Chocolate almond croissants are a delightful treat that combines the rich flavors of chocolate and almond in a flaky, buttery pastry.

Ingredients

Scale
  • 1 package of puff pastry (2 sheets, thawed)
  • 100g dark chocolate (about 3.5 oz, chopped or in chocolate chip form)
  • 100g almond paste (around 3.5 oz)
  • 1 egg (for egg wash)
  • 2 tablespoons milk (for egg wash)
  • Powdered sugar (for dusting)
  • Chocolate shavings (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry sheets on a lightly floured surface and cut each sheet into four equal triangles.
  3. In a small bowl, combine the chopped dark chocolate and almond paste until well blended.
  4. Take one triangle of puff pastry and place about a tablespoon of the chocolate-almond filling near the wide end, then roll it towards the point.
  5. Place the rolled croissants on a baking sheet lined with parchment paper.
  6. Whisk together the egg and milk for the egg wash, then brush the tops of the croissants.
  7. Bake for 15-20 minutes until puffed and golden brown.
  8. Let cool slightly, dust with powdered sugar, and sprinkle with chocolate shavings if desired.

Notes

  • Use high-quality dark chocolate with at least 60% cocoa content for the best flavor.
  • Keep the dough cold to ensure flaky layers.
  • Store leftovers in an airtight container at room temperature for up to two days.
  • Freeze baked croissants for up to three months and reheat in the oven.
