- 4 large flour tortillas
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn
- 1 can (4 oz) diced green chilies
- 1 cup shredded cheese (Cheddar or Mexican blend)
- 1 red bell pepper, diced
- 2 green onions, chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Oil for frying (vegetable or canola)
Instructions
- In a large mixing bowl, combine black beans, corn, diced green chilies, shredded cheese, diced red bell pepper, and chopped green onions. Add ground cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well.
- Lay a flour tortilla flat and spoon 2-3 tablespoons of the filling mixture into the center. Fold the sides over the filling and roll tightly from the bottom to the top. Repeat with remaining tortillas and filling.
- Heat oil in a deep skillet over medium heat until it reaches 350°F (175°C). Fry the egg rolls in batches for 3-4 minutes on each side until golden brown and crispy. Drain on paper towels before serving.
