Ingredients

  • Pappardelle pasta: 250 grams (about 9 oz)
  • Olive oil: 3 tablespoons
  • Garlic: 4 cloves, minced
  • Chili flakes: 1 teaspoon (adjust to taste)
  • Broccoli: 1 head, cut into florets
  • Eggs: 4 large
  • Lemon zest: from 1 lemon
  • Parmesan cheese: 50 grams (about 1/2 cup), grated
  • Salt: to taste
  • Black pepper: to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the pappardelle according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat and sauté the broccoli florets for 5-7 minutes until tender and bright green. Season with salt and pepper.
  3. Add minced garlic and chili flakes to the skillet and sauté for 1-2 minutes, being careful not to brown the garlic.
  4. Add the drained pappardelle to the skillet and toss with the broccoli and chili garlic sauce. If dry, add reserved pasta water gradually.
  5. Prepare soft-boiled eggs by boiling them for 6-7 minutes, then transfer to an ice bath. Peel gently.
  6. Stir in lemon zest and half of the grated Parmesan cheese into the pasta mixture.
  7. Plate the pappardelle and top with soft-boiled eggs and remaining Parmesan cheese.
