Ingredients
- Pappardelle pasta: 250 grams (about 9 oz)
- Olive oil: 3 tablespoons
- Garlic: 4 cloves, minced
- Chili flakes: 1 teaspoon (adjust to taste)
- Broccoli: 1 head, cut into florets
- Eggs: 4 large
- Lemon zest: from 1 lemon
- Parmesan cheese: 50 grams (about 1/2 cup), grated
- Salt: to taste
- Black pepper: to taste
Instructions
- Bring a large pot of salted water to a boil and cook the pappardelle according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat and sauté the broccoli florets for 5-7 minutes until tender and bright green. Season with salt and pepper.
- Add minced garlic and chili flakes to the skillet and sauté for 1-2 minutes, being careful not to brown the garlic.
- Add the drained pappardelle to the skillet and toss with the broccoli and chili garlic sauce. If dry, add reserved pasta water gradually.
- Prepare soft-boiled eggs by boiling them for 6-7 minutes, then transfer to an ice bath. Peel gently.
- Stir in lemon zest and half of the grated Parmesan cheese into the pasta mixture.
- Plate the pappardelle and top with soft-boiled eggs and remaining Parmesan cheese.
