Description
Chickpea Blondies are a healthy, gluten-free twist on the classic dessert, using chickpeas for a protein-packed, soft, and chewy treat.

- 1 can (15 oz) of chickpeas, drained and rinsed
- 1/2 cup of natural peanut butter or almond butter
- 1/3 cup of honey or maple syrup
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1/2 cup of chocolate chips (optional, but recommended)
- 1/4 cup of oats (optional for texture)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch square pan or line it with parchment paper.
- Drain and rinse the chickpeas, then blend them in a food processor until smooth and creamy.
- Add the nut butter, honey or maple syrup, vanilla extract, baking soda, salt, and oats (if using) to the chickpea mixture. Blend until smooth.
- Transfer the mixture to a bowl and fold in the chocolate chips.
- Pour the batter into the prepared pan, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let the blondies cool in the pan for 10 minutes, then transfer to a cooling rack. Once fully cooled, cut into squares and serve.
Notes
- Use freshly opened canned chickpeas for a cleaner taste.
- For a nut-free version, use sunflower seed butter instead of nut butter.
- For a vegan alternative, swap honey with maple syrup.
- If you prefer a smoother texture, omit the oats.
- Let the blondies cool completely before cutting for the best texture.
