Description

Chickpea Blondies are a healthy, gluten-free twist on the classic dessert, using chickpeas for a protein-packed, soft, and chewy treat.


Ingredients

  • 1 can (15 oz) of chickpeas, drained and rinsed
  • 1/2 cup of natural peanut butter or almond butter
  • 1/3 cup of honey or maple syrup
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 cup of chocolate chips (optional, but recommended)
  • 1/4 cup of oats (optional for texture)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch square pan or line it with parchment paper.
  2. Drain and rinse the chickpeas, then blend them in a food processor until smooth and creamy.
  3. Add the nut butter, honey or maple syrup, vanilla extract, baking soda, salt, and oats (if using) to the chickpea mixture. Blend until smooth.
  4. Transfer the mixture to a bowl and fold in the chocolate chips.
  5. Pour the batter into the prepared pan, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Let the blondies cool in the pan for 10 minutes, then transfer to a cooling rack. Once fully cooled, cut into squares and serve.

Notes

  • Use freshly opened canned chickpeas for a cleaner taste.
  • For a nut-free version, use sunflower seed butter instead of nut butter.
  • For a vegan alternative, swap honey with maple syrup.
  • If you prefer a smoother texture, omit the oats.
