Ingredients

  • Spaghetti: 200 grams
  • Chicken Breast: 300 grams, thinly sliced
  • Bell Pepper: 1, sliced
  • Carrot: 1 medium, julienned
  • Green Onions: 3, chopped
  • Soy Sauce: 3 tablespoons
  • Garlic: 2 cloves, minced
  • Ginger: 1 teaspoon, minced
  • Sesame Oil: 1 tablespoon
  • Vegetable Oil: 1 tablespoon
  • Sesame Seeds: 1 tablespoon, for garnish
  • Salt and Pepper: to taste

Instructions

  1. Prepare the chicken by slicing it thinly and seasoning with salt and pepper. Optionally, marinate in soy sauce, garlic, and ginger for 30 minutes.
  2. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving a small cup of pasta water.
  3. In a large skillet or wok, heat vegetable oil over medium-high heat. Sauté minced garlic and ginger for about 30 seconds until fragrant.
  4. Add sliced bell pepper and julienned carrot to the skillet and stir-fry for 3-4 minutes until tender but crisp.
  5. Return the cooked chicken to the skillet, add the drained spaghetti, soy sauce, and sesame oil. Toss everything together, adding reserved pasta water if needed for consistency.
  6. Remove from heat, stir in chopped green onions, and sprinkle sesame seeds on top. Serve warm.
