  • 2 packs of instant ramen noodles (discard the seasoning packets)
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 cup broccoli florets
  • 1 cup carrots, julienned or sliced thinly
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons sesame oil
  • 3 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Prepare the ramen noodles by boiling them in water for 3-4 minutes, then drain and set aside.
  2. Marinate the sliced chicken with salt, pepper, and a splash of soy sauce for about 10 minutes.
  3. Chop the vegetables: slice the bell peppers, julienne the carrots, and break the broccoli into florets.
  4. In a skillet, heat 1 tablespoon of sesame oil and stir-fry the marinated chicken for 5-7 minutes until golden brown.
  5. Add the remaining sesame oil, garlic, and ginger to the skillet, sauté for 30 seconds, then add the vegetables and stir-fry for 3-5 minutes.
