- 2 boneless, skinless chicken breasts (about 1 lb or 450 g), sliced into thin strips
- 2 packs of instant ramen noodles (discard the seasoning packets)
- 1 red bell pepper, sliced into thin strips
- 1 yellow bell pepper, sliced into thin strips
- 1 cup broccoli florets
- 1 cup carrots, julienned or sliced thinly
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons sesame oil
- 3 green onions, sliced (for garnish)
- Salt and pepper to taste
Instructions
- Prepare the ramen noodles by boiling them in water for 3-4 minutes, then drain and set aside.
- Marinate the sliced chicken with salt, pepper, and a splash of soy sauce for about 10 minutes.
- Chop the vegetables: slice the bell peppers, julienne the carrots, and break the broccoli into florets.
- In a skillet, heat 1 tablespoon of sesame oil and stir-fry the marinated chicken for 5-7 minutes until golden brown.
- Add the remaining sesame oil, garlic, and ginger to the skillet, sauté for 30 seconds, then add the vegetables and stir-fry for 3-5 minutes.
- Return the chicken to the skillet, add soy sauce, and mix well. Finally, add the cooked ramen noodles and toss everything together until heated through.
- Adjust seasoning if needed, garnish with green onions and sesame seeds, and serve warm.
