  • Chicken Thighs: 4 bone-in, skin-on
  • Onion: 1 medium, chopped
  • Carrots: 2, sliced
  • Celery: 2 stalks, chopped
  • Garlic: 3 cloves, minced
  • White Wine: 1 cup
  • Chicken Broth: 2 cups
  • Heavy Cream: 1 cup
  • Dried Thyme: 1 teaspoon
  • Bay Leaves: 2
  • Salt and Pepper: to taste
  • Olive Oil: 2 tablespoons

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat olive oil in a skillet and sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
  3. Flip the chicken and cook for another 5 minutes, then remove from skillet.
  4. Sauté onion, carrots, and celery in the same skillet for 5 minutes, then add garlic and cook for 1 more minute.
