Ingredients

  • 4 chicken thighs – bone-in and skin-on for best flavor
  • 2 medium sweet potatoes – peeled and cut into 1-inch cubes
  • 2 medium apples – cored and sliced (Honeycrisp or Fuji recommended)
  • 3 tablespoons olive oil
  • 2 teaspoons fresh rosemary – chopped
  • 4 cloves garlic – minced
  • Salt and pepper – to taste

Instructions

  1. Wash sweet potatoes and apples, peel and cut sweet potatoes into 1-inch cubes, core and slice apples.
  2. Pat chicken thighs dry and season with salt and pepper.
  3. In a bowl, combine sweet potatoes and apples, drizzle with 2 tablespoons olive oil, add garlic and rosemary, and toss to coat.
  4. Spread sweet potato and apple mixture on a baking sheet, place chicken thighs on top, and drizzle with remaining olive oil.
  5. Preheat oven to 425°F (220°C) and roast for 35-40 minutes until chicken reaches 165°F (74°C) and vegetables are tender.
  6. Let rest for a few minutes before serving, optionally drizzling pan juices over the top.
