- 2 medium sweet potatoes – peeled and cut into 1-inch cubes
- 2 medium apples – cored and sliced (Honeycrisp or Fuji recommended)
- 3 tablespoons olive oil
- 2 teaspoons fresh rosemary – chopped
- 4 cloves garlic – minced
- Salt and pepper – to taste
Instructions
- Wash sweet potatoes and apples, peel and cut sweet potatoes into 1-inch cubes, core and slice apples.
- Pat chicken thighs dry and season with salt and pepper.
- In a bowl, combine sweet potatoes and apples, drizzle with 2 tablespoons olive oil, add garlic and rosemary, and toss to coat.
- Spread sweet potato and apple mixture on a baking sheet, place chicken thighs on top, and drizzle with remaining olive oil.
- Preheat oven to 425°F (220°C) and roast for 35-40 minutes until chicken reaches 165°F (74°C) and vegetables are tender.
- Let rest for a few minutes before serving, optionally drizzling pan juices over the top.
