Ingredients
- Spaghetti: 300 grams
- Chicken breast: 200 grams, diced
- Shrimp: 200 grams, peeled and deveined
- Eggs: 2 large
- Parmesan cheese: 100 grams, grated
- Garlic: 3 cloves, minced
- Black pepper: to taste
- Olive oil: 2 tablespoons
- Fresh parsley: a handful, chopped
- Salt: to taste
Instructions
- Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Cook the diced chicken until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add another tablespoon of olive oil if needed, sauté minced garlic for 30 seconds, then add shrimp and cook until pink and opaque, about 3-4 minutes. Remove and set aside with the chicken.
- In a bowl, whisk together eggs and grated Parmesan cheese, seasoning with salt and black pepper.
- Add drained spaghetti to the skillet off the heat, pour the egg and cheese mixture over it, and toss quickly to create a creamy sauce. Add reserved pasta water as needed for consistency.
- Serve immediately, garnished with chopped parsley and additional black pepper.
