- 1/2 cup semi-sweet chocolate chips, plus a few extra for the tops
Instructions
- In a medium bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
- Add vanilla extract and pumpkin puree to the mixture and whisk until well combined.
- In a large bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, and pumpkin pie spice.
- Pour the wet mixture into the dry mixture and stir until just combined. Do not overmix.
- Fold in the chocolate chips gently. Reserve a few for topping if desired.
- Cover the dough and chill in the refrigerator for at least 30 minutes or up to 3 days.
- Preheat oven to 350°F (177°C) and line two baking sheets with parchment paper.
- Scoop about 1.5 tablespoons of dough for each cookie, roll into balls, slightly flatten, and place on the baking sheet.
- Bake for 11-12 minutes until edges are set and centers are slightly soft.
- Cool on baking sheets for 10 minutes before transferring to a wire rack to cool completely.
