  • Taco seasoning: 1 packet (about 1 oz or 28 g)
  • Cheddar cheese: 1 cup, shredded (about 4 oz or 113 g)
  • Diced tomatoes: 1 can (14.5 oz or 411 g), drained
  • Black beans: 1 can (15 oz or 425 g), drained and rinsed
  • Corn: 1 cup (fresh, frozen, or canned)
  • Green onions: 1/4 cup, chopped (about 2-3 green onions)
  • Sour cream: 1/2 cup (for serving)
  • Olive oil: 1 tablespoon (for cooking)
  • Salt and pepper: to taste
  • Water: 2 cups (for cooking rice)

Instructions

  1. Gather all your ingredients.
  2. Rinse the long-grain rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes. Fluff the rice with a fork after letting it sit covered for 5 minutes.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef, breaking it up as it cooks. Season with salt and pepper, and cook until browned (about 5-7 minutes). Drain excess fat.
