Description
Cheesy Taco Rice is a delightful dish that combines the flavors of classic tacos with the comforting texture of rice. It’s a one-pot meal perfect for busy weeknights or casual gatherings.
Ingredients
- Long-grain rice: 1 cup (uncooked)
- Ground beef: 1 lb (450 g)
- Taco seasoning: 1 packet (about 1 oz or 28 g)
- Cheddar cheese: 1 cup, shredded (about 4 oz or 113 g)
- Diced tomatoes: 1 can (14.5 oz or 411 g), drained
- Black beans: 1 can (15 oz or 425 g), drained and rinsed
- Corn: 1 cup (fresh, frozen, or canned)
- Green onions: 1/4 cup, chopped (about 2-3 green onions)
- Sour cream: 1/2 cup (for serving)
- Olive oil: 1 tablespoon (for cooking)
- Salt and pepper: to taste
- Water: 2 cups (for cooking rice)
Instructions
- Gather all your ingredients.
- Rinse the long-grain rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes. Fluff the rice with a fork after letting it sit covered for 5 minutes.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef, breaking it up as it cooks. Season with salt and pepper, and cook until browned (about 5-7 minutes). Drain excess fat.
- Add the taco seasoning to the cooked beef, stirring to coat. Then add the drained diced tomatoes, black beans, and corn. Mix and cook for an additional 5 minutes.
- Add the cooked rice to the skillet and stir until well combined. Sprinkle shredded cheddar cheese on top, cover, and let sit for 2-3 minutes until the cheese melts.
Notes
- For a vegetarian option, replace ground beef with a mix of vegetables.
- For a spicier version, add diced jalapeños or use spicy taco seasoning.
