- 4 medium yellow squash (about 1.5 lbs), sliced
- 1 cup cheddar cheese, shredded
- 1 cup heavy cream
- 1 cup breadcrumbs (preferably seasoned)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 3 large eggs
- 1/2 teaspoon black pepper
- 1 tablespoon fresh herbs (such as thyme or parsley), chopped
- 2 tablespoons olive oil or butter (for sautéing)
- Salt to taste
Instructions
- Wash and slice the yellow squash into thin rounds, about 1/4 inch thick.
- Heat olive oil or butter in a large skillet over medium heat, add onion and garlic, and sauté for about 5 minutes until translucent.
- Add the sliced yellow squash to the skillet and cook for another 5-7 minutes, stirring occasionally. Season with salt and black pepper, then remove from heat.
- In a large mixing bowl, whisk together the eggs and heavy cream until well combined. Stir in the shredded cheddar cheese and fresh herbs.
- Add the sautéed squash mixture to the egg and cheese mixture, stirring gently to combine.
- Grease a 9×13-inch baking dish and pour the combined mixture into it, spreading it out evenly. Sprinkle breadcrumbs over the top.
- Preheat the oven to 350°F (175°C) and bake for 30-35 minutes until the top is golden brown and the casserole is set.
- Let it cool for about 10 minutes before serving.

- For added protein, consider mixing in cooked bacon, sausage, or shredded chicken.
- To make it gluten-free, use gluten-free breadcrumbs.
