  • 4 cups water or chicken broth
  • 1 cup cheddar cheese
  • 2 cups fresh spinach
  • 4 large eggs
  • 2 tablespoons butter
  • 2 cloves garlic
  • Salt and pepper

Instructions

  1. In a medium saucepan, bring 4 cups of water or chicken broth to a boil. Gradually whisk in 1 cup of grits and reduce heat to low. Cook for 20-25 minutes until thick and creamy.
  2. In a skillet, melt 1 tablespoon of butter over medium heat. Sauté 2 cloves of minced garlic for 1 minute, then add 2 cups of chopped spinach and cook until wilted. Season with salt and pepper.
  3. In the same skillet, add the remaining tablespoon of butter and fry 4 large eggs until the whites are set and edges are crispy, about 3-4 minutes.
  4. Stir 1 cup of shredded cheddar cheese into the cooked grits until melted. Serve the grits topped with sautéed spinach and a fried egg.
