Description

Cheesecake pops are creamy, bite-sized treats combining classic cheesecake filling with fresh strawberries and a crunchy graham cracker topping. They are perfect for parties, snacks, or any occasion.

Ingredients

Scale
  • 2 (8-ounce) blocks of cream cheese
  • 1/4 cup sour cream
  • 3/4 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 cup chopped strawberries
  • 1/4 cup crushed graham crackers
  • 15 popsicle sticks

Instructions

  1. Let the cream cheese soften at room temperature for 10-15 minutes.
  2. In a large bowl, beat softened cream cheese, sour cream, powdered sugar, vanilla extract, and salt until smooth and creamy.
  3. Gently fold in the chopped strawberries using a spatula.
  4. Spoon the mixture into Dixie cups, filling each about three-quarters full, and smooth the tops.
  5. Sprinkle crushed graham crackers over each filled cup.
  6. Insert a popsicle stick into the center of each cup, ensuring it stands upright.
  7. Place the cups in the freezer and freeze for 4 to 6 hours or until solid.
  8. Once frozen, remove the cheesecake pops from the cups and serve immediately.

Notes

  • Use Greek yogurt instead of sour cream for a healthier version.
  • Substitute strawberries with other berries like raspberries or blueberries.
  • Replace powdered sugar with honey or maple syrup for natural sweetness.
  • Use gluten-free graham crackers for a gluten-free option.
  • Let pops thaw for a few minutes at room temperature before serving.
  • Do not microwave to thaw; this will ruin the texture.
  • Store in the freezer in an airtight container with parchment between layers for up to 1 month.
