  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 tablespoons granulated sugar

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • For the Brûlée Topping:
  • 1/4 cup granulated sugar

Instructions

  1. Preheat oven to 325°F (163°C) and line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press the mixture into the bottom of each cupcake liner. Bake for 5 minutes and set aside to cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract and heavy cream.
  4. Pour cheesecake filling over the crust, filling each liner about 3/4 full. Bake for 18-20 minutes. The edges should be set, and the center should jiggle slightly. Cool at room temperature, then refrigerate for at least 2 hours.
  5. Once chilled, sprinkle 1 teaspoon of sugar on each cheesecake. Caramelize the sugar using a kitchen torch or broiler until golden brown and bubbly.

Notes

  • For a lighter version, use low-fat cream cheese or Greek yogurt instead of regular cream cheese.
  • Be careful not to over-bake the cupcakes, as this can cause cracks in the cheesecake.
