- 1 unbaked pie crust
- 1 large egg yolk beaten with 1 tablespoon milk (for egg wash)
- 1 (15-ounce) can pumpkin puree
- 2 large eggs
- 1 cup packed light or dark brown sugar
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 2 and 1/2 teaspoons chai spice mix
- 2/3 cup heavy cream
- 1/3 cup whole milk
- 3 large egg whites at room temperature
- 1/3 cup granulated sugar
- 1/8 teaspoon cream of tartar
- 1/2 teaspoon chai spice mix (for topping)
Instructions
- Make the Pie Dough: Prepare your pie dough, chill, roll out, and place it in a pie dish. Crimp the edges.
- Par Bake the Crust: Preheat oven to 375°F (190°C), line crust with parchment, add weights, and par-bake for 10 minutes. Brush edges with egg wash and bake for additional 7-8 minutes.
- Prepare the Pumpkin Pie Filling: Whisk together pumpkin puree, eggs, brown sugar, cornstarch, salt, chai spice mix, heavy cream, and milk until smooth.
- Pour Filling and Bake: Pour filling into crust and bake for 55-60 minutes, covering edges with foil after 25 minutes. Let cool for at least 3 hours.
- Make the Meringue Topping: Whisk egg whites, sugar, and cream of tartar over simmering water until the sugar dissolves, then beat to stiff peaks and mix in chai spice.
- Assemble the Pie: Spread meringue over the cooled filling, create peaks, and toast if desired before serving.

Store leftovers at room temperature covered; do not refrigerate or freeze with meringue.
