- 1 cup (120g) chopped pistachios
- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) brown sugar
- 3 large eggs
- Zest of 1 large orange
- ½ cup (120ml) freshly squeezed orange juice
- 1 tsp vanilla extract
For the Rose Glaze:
- 1 cup (120g) powdered sugar
- 2–3 tbsp rose water
- 1–2 tbsp orange juice
- A few drops of pink food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and ginger.
- Cream the butter and brown sugar in a large bowl until light and fluffy, then add eggs one at a time.
- Stir in orange zest, orange juice, and vanilla extract.
- Gently fold in the flour mixture until just combined, then fold in grated carrots and chopped pistachios.
- Pour the batter into the prepared cake pan and bake for 35 to 40 minutes.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together powdered sugar, rose water, and orange juice until smooth.
- Drizzle the glaze over the cooled cake and let it set before serving.
