Description

Ingredients

  • 1 ½ cups (180g) grated carrots
  • 1 cup (120g) chopped pistachios
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • 3 large eggs
  • Zest of 1 large orange
  • ½ cup (120ml) freshly squeezed orange juice
  • 1 tsp vanilla extract

For the Rose Glaze:

  • 1 cup (120g) powdered sugar
  • 23 tbsp rose water
  • 12 tbsp orange juice
  • A few drops of pink food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and ginger.
  3. Cream the butter and brown sugar in a large bowl until light and fluffy, then add eggs one at a time.
  4. Stir in orange zest, orange juice, and vanilla extract.
  5. Gently fold in the flour mixture until just combined, then fold in grated carrots and chopped pistachios.
  6. Pour the batter into the prepared cake pan and bake for 35 to 40 minutes.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, whisk together powdered sugar, rose water, and orange juice until smooth.
  9. Drizzle the glaze over the cooled cake and let it set before serving.
