A moist and flavorful pudding made with carrots, dates, and sultanas, topped with a rich ginger toffee sauce.

- 2 cups (250g) finely grated carrots
- 1 cup (150g) chopped pitted dates
- ½ cup (75g) sultanas (golden raisins)
- 1 cup (200g) light brown sugar, packed
- 3 large eggs
- 1 cup (120g) self-raising flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp salt
- 100g unsalted butter, melted
- 100g unsalted butter
- 150g dark brown sugar
- 120ml double cream (heavy cream)
- 2 tsp freshly grated ginger
Instructions
- Prepare the ingredients by finely grating the carrots and chopping the dates.
- Sift together the self-raising flour, baking powder, ground cinnamon, ground ginger, and salt in a separate bowl.
- In a large mixing bowl, whisk the eggs and light brown sugar until pale and creamy, then stir in the melted butter.
- Gently fold in the grated carrots, chopped dates, and sultanas into the wet mixture.
- Pour the batter into a prepared baking dish and bake at 350°F (175°C) for 50-60 minutes.
- While the pudding is baking, prepare the ginger toffee sauce by melting butter and dark brown sugar, then adding double cream and grated ginger.
Notes
- Allow the pudding to cool completely before storing.
- Wrap tightly to keep fresh and prevent odor absorption.
- Reheat gently before serving leftovers.
