  • 1 cup (240ml) boiling water
  • 1 tsp baking soda
  • 1 1/2 cups (180g) grated carrots
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups (150g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of salt

For the Brown Sugar Butter Sauce:

  • 1/2 cup (115g) unsalted butter
  • 1/2 cup (100g) light brown sugar
  • 1/4 cup (60ml) heavy cream
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the carrots and dates by washing, peeling, and grating the carrots. Soak the chopped dates in boiling water with baking soda for 10 minutes.
  2. Mix the dry ingredients: flour, baking powder, cinnamon, nutmeg, and salt in a separate bowl.
  3. Cream together the butter and brown sugar until light and fluffy, then add eggs and vanilla extract.
  4. Fold in the grated carrots and mashed date mixture, then gradually add the dry ingredients until just combined.
  5. Preheat the oven to 350°F (175°C) and grease a baking dish. Pour the batter into the dish and bake for 35-40 minutes.
  6. While baking, prepare the brown sugar sauce by melting butter, adding brown sugar and cream, and stirring until smooth.
