- 1 cup (240ml) boiling water
- 1 tsp baking soda
- 1 1/2 cups (180g) grated carrots
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/4 cups (150g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Pinch of salt
For the Brown Sugar Butter Sauce:
- 1/2 cup (115g) unsalted butter
- 1/2 cup (100g) light brown sugar
- 1/4 cup (60ml) heavy cream
- 1/2 tsp vanilla extract
Instructions
- Prepare the carrots and dates by washing, peeling, and grating the carrots. Soak the chopped dates in boiling water with baking soda for 10 minutes.
- Mix the dry ingredients: flour, baking powder, cinnamon, nutmeg, and salt in a separate bowl.
- Cream together the butter and brown sugar until light and fluffy, then add eggs and vanilla extract.
- Fold in the grated carrots and mashed date mixture, then gradually add the dry ingredients until just combined.
- Preheat the oven to 350°F (175°C) and grease a baking dish. Pour the batter into the dish and bake for 35-40 minutes.
- While baking, prepare the brown sugar sauce by melting butter, adding brown sugar and cream, and stirring until smooth.
