Delicious Carrot Cake Whoopie Pies combining the flavors of carrot cake with a creamy filling.
Ingredients

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup grated carrots (about 2 medium carrots)
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, mix the granulated sugar, brown sugar, and vegetable oil until combined. Add the egg and vanilla extract, beating until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the grated carrots and crushed pineapple, and nuts if using.
- Scoop rounded tablespoons of batter onto the prepared baking sheet, leaving space between each scoop. Bake for 12-15 minutes until edges are golden and a toothpick comes out clean.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- For the cream cheese filling, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until fluffy.
- Once cookies are cool, spread cream cheese frosting on the flat side of one cookie and sandwich with another cookie. Dust with powdered sugar if desired.
