Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, mix the granulated sugar, brown sugar, and vegetable oil until combined. Add the egg and vanilla extract, beating until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the grated carrots and crushed pineapple, and nuts if using.
  5. Scoop rounded tablespoons of batter onto the prepared baking sheet, leaving space between each scoop. Bake for 12-15 minutes until edges are golden and a toothpick comes out clean.
  6. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  7. For the cream cheese filling, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until fluffy.
  8. Once cookies are cool, spread cream cheese frosting on the flat side of one cookie and sandwich with another cookie. Dust with powdered sugar if desired.
