  • 120g honey (about 1/2 cup)
  • 3 large eggs
  • 1 teaspoon ground cardamom
  • 2 ripe pears, peeled and chopped
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 60ml coconut oil (about 1/4 cup)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cake pan with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, honey, coconut oil, vanilla extract, and lemon zest (if using) until smooth.
  3. Add the ground almonds, cardamom, baking soda, and salt. Mix well until fully combined into a thick batter.
  4. Gently fold in the chopped pears, ensuring they are evenly distributed.
  5. Pour the batter into the prepared cake pan and spread it evenly.
