- 60ml coconut oil (about 1/4 cup)
- 1 teaspoon vanilla extract
- Zest of 1 lemon (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a cake pan with parchment paper.
- In a large mixing bowl, whisk together the eggs, honey, coconut oil, vanilla extract, and lemon zest (if using) until smooth.
- Add the ground almonds, cardamom, baking soda, and salt. Mix well until fully combined into a thick batter.
- Gently fold in the chopped pears, ensuring they are evenly distributed.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
