Ingredients

  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cardamom
  • ¼ tsp salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • Zest of 2 large oranges
  • 1 tsp pure vanilla extract
  • ½ cup (120ml) plain yogurt
  • ½ cup (60g) shelled pistachios, chopped, plus extra for garnish

For the Orange Cardamom Syrup, you will need:

  • ½ cup (100g) sugar
  • ½ cup (120ml) fresh orange juice
  • 1 tsp ground cardamom

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cardamom, and salt.
  3. Cream the butter and sugar in a large mixing bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the orange zest and vanilla.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the yogurt, mixing until just combined.
  6. Fold in the chopped pistachios and pour the batter into the prepared pan.
  7. Bake for 35-40 minutes, checking for doneness with a toothpick.
  8. Prepare the syrup by simmering sugar, orange juice, and cardamom in a saucepan for about 5 minutes.
  9. Once the cake is baked, let it cool, poke holes in the top, and pour the syrup over it.
  10. Garnish with extra pistachios before serving.
