- 1 ¾ cups (220g) all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp ground cardamom
- ¼ tsp salt
- ¾ cup (170g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 3 large eggs
- Zest of 2 large oranges
- 1 tsp pure vanilla extract
- ½ cup (120ml) plain yogurt
- ½ cup (60g) shelled pistachios, chopped, plus extra for garnish
For the Orange Cardamom Syrup, you will need:
- ½ cup (100g) sugar
- ½ cup (120ml) fresh orange juice
- 1 tsp ground cardamom
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cardamom, and salt.
- Cream the butter and sugar in a large mixing bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the orange zest and vanilla.
- Gradually add the dry ingredients to the wet mixture, alternating with the yogurt, mixing until just combined.
- Fold in the chopped pistachios and pour the batter into the prepared pan.
- Bake for 35-40 minutes, checking for doneness with a toothpick.
- Prepare the syrup by simmering sugar, orange juice, and cardamom in a saucepan for about 5 minutes.
- Once the cake is baked, let it cool, poke holes in the top, and pour the syrup over it.
- Garnish with extra pistachios before serving.

- Store in an airtight container at room temperature for up to three days.
- For longer storage, refrigerate or freeze the cake.
- Garnish with pistachios just before serving to maintain crunchiness.
