  • 2 large eggs
  • 1/2 cup (120ml) plain yogurt
  • 1/4 cup (60ml) fresh orange juice
  • Zest of 1 orange
  • 1 tsp pure vanilla extract
  • 1/3 cup (40g) all-purpose flour
  • 1/4 cup (50g) brown sugar
  • 1/2 tsp ground cardamom
  • 1/4 cup (55g) cold unsalted butter, cubed
  • 1/2 cup (60g) shelled pistachios, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cardamom, and salt.
  3. In a large mixing bowl, cream the softened unsalted butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then mix in the orange zest.
  5. Gradually add the dry ingredients to the wet mixture, along with the plain yogurt and fresh orange juice, stirring gently until just combined.
  6. In a small bowl, mix together the all-purpose flour, brown sugar, and ground cardamom for the streusel, then cut in the cold unsalted butter until it resembles coarse crumbs. Stir in the chopped pistachios.
  7. Pour the cake batter into the prepared pan, smooth the top, and sprinkle the pistachio streusel evenly over the batter.
  8. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
  9. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
