- 1/2 cup (120ml) plain yogurt

- 1/3 cup (40g) all-purpose flour
- 1/4 cup (50g) brown sugar
- 1/2 tsp ground cardamom
- 1/4 cup (55g) cold unsalted butter, cubed
- 1/2 cup (60g) shelled pistachios, chopped
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cardamom, and salt.
- In a large mixing bowl, cream the softened unsalted butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the orange zest.
- Gradually add the dry ingredients to the wet mixture, along with the plain yogurt and fresh orange juice, stirring gently until just combined.
- In a small bowl, mix together the all-purpose flour, brown sugar, and ground cardamom for the streusel, then cut in the cold unsalted butter until it resembles coarse crumbs. Stir in the chopped pistachios.
- Pour the cake batter into the prepared pan, smooth the top, and sprinkle the pistachio streusel evenly over the batter.
- Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
