- ⅓ cup unsalted butter, melted
- ¼ cup granulated sugar
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup caramel sauce (store-bought or homemade)
- 1 cup chopped pecans
- ½ cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Mix chocolate cookie crumbs, melted butter, and sugar. Press into the bottom of a springform pan. Bake for 10 minutes and cool.
- Beat softened cream cheese with granulated sugar, vanilla extract, and eggs. Add sour cream and mix until smooth.
- Pour the filling into the cooled crust and smooth the top. Bake for 50-60 minutes until edges are set and center is slightly jiggly. Let cool in the oven for 1 hour, then remove and cool to room temperature.
- Chill in the refrigerator for at least 4 hours or overnight. Once chilled, melt chocolate chips and drizzle over the cheesecake. Pour caramel sauce and sprinkle chopped pecans on top.
