Description

Caramel Coconut Macaroon Thumbprints are chewy, coconut-packed cookies filled with rich caramel, drizzled with chocolate, and finished with a touch of flaky sea salt for a decadent treat.


Ingredients

  • 17 ounces sweetened shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • 2 large egg whites
  • 1/2 cup homemade salted caramel sauce (cooled)
  • 4 ounces semi-sweet chocolate (finely chopped)
  • Optional: sprinkle of flaky sea salt

Instructions

  1. Make the caramel sauce ahead of time and let it cool completely before use.
  2. Preheat oven to 325°F (165°C) and line baking sheets with parchment paper.
  3. Pulse shredded coconut in a food processor until finely chopped, or chop by hand.
  4. In a large bowl, beat the egg, egg whites, sugar, salt, and vanilla until frothy and sugar is dissolved.
  5. Fold in chopped coconut until fully combined. The mixture should be sticky, not runny.
  6. Using a tablespoon, scoop 15 mounds of the coconut mixture onto prepared baking sheets, spacing them two inches apart.
  7. Press a thumb into the center of each mound to form an indent.
  8. Bake for 20–24 minutes or until edges are golden brown.
  9. Let the macaroons cool on the baking sheet for 10 minutes.
  10. Spoon the cooled caramel sauce into the center of each macaroon.
  11. Melt chocolate in the microwave or double boiler, then drizzle over the macaroons.
  12. Sprinkle with flaky sea salt if desired.
  13. Allow the chocolate and caramel to set before serving.
