- 1/2 cup packed light or dark brown sugar
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 6 Tablespoons whole milk, at room temperature
Instructions
- Preheat oven to 350°F (175°C). In a saucepan over medium heat, melt 6 tablespoons of butter with 3/4 cup brown sugar. Whisk for 1 minute until smooth. Remove from heat and stir in 1/4 teaspoon cinnamon and 1/4 teaspoon vanilla.
- Pour the caramel mixture into a 9×2 inch pie dish or round cake pan. Arrange apple slices over the caramel. Refrigerate while preparing batter.
- In a medium bowl, whisk together flour, baking powder, 1 1/2 teaspoons cinnamon, nutmeg, and salt.
- In a large bowl, beat 1/2 cup softened butter until smooth. Add granulated sugar and 1/2 cup brown sugar, beating until light and fluffy (3–5 minutes).
- Beat in eggs one at a time, followed by 1 teaspoon vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing gently until combined. Add milk and beat until smooth.
- Remove pan from fridge. Spread cake batter evenly over apple slices.
- Bake for 40–46 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Let cake cool for 15 minutes. Invert onto a serving plate and serve warm or at room temperature.
