  • 2 medium apples, peeled and sliced into 1/4 inch slices
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light or dark brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 6 Tablespoons whole milk, at room temperature

Instructions

  1. Preheat oven to 350°F (175°C). In a saucepan over medium heat, melt 6 tablespoons of butter with 3/4 cup brown sugar. Whisk for 1 minute until smooth. Remove from heat and stir in 1/4 teaspoon cinnamon and 1/4 teaspoon vanilla.
  2. Pour the caramel mixture into a 9×2 inch pie dish or round cake pan. Arrange apple slices over the caramel. Refrigerate while preparing batter.
  3. In a medium bowl, whisk together flour, baking powder, 1 1/2 teaspoons cinnamon, nutmeg, and salt.
  4. In a large bowl, beat 1/2 cup softened butter until smooth. Add granulated sugar and 1/2 cup brown sugar, beating until light and fluffy (3–5 minutes).
  5. Beat in eggs one at a time, followed by 1 teaspoon vanilla extract.
  6. Gradually add dry ingredients to wet ingredients, mixing gently until combined. Add milk and beat until smooth.
  7. Remove pan from fridge. Spread cake batter evenly over apple slices.
  8. Bake for 40–46 minutes, or until a toothpick inserted in the center comes out mostly clean.
  9. Let cake cool for 15 minutes. Invert onto a serving plate and serve warm or at room temperature.
