Ingredients
- Cream cheese: 450 grams (16 oz), softened
- Granulated sugar: 200 grams (1 cup)
- Eggs: 3 large
- Vanilla extract: 1 teaspoon
- Graham cracker crumbs: 150 grams (1 1/2 cups)
- Unsalted butter: 75 grams (1/3 cup), melted
- Fresh apples: 2 medium, peeled, cored, and diced
- Caramel sauce: 200 grams (about 3/4 cup), plus extra for drizzling
- Ground cinnamon: 1 teaspoon
- Salt: a pinch
Instructions
- Preheat your oven to 175°C (350°F). Combine graham cracker crumbs, melted butter, and a pinch of salt in a mixing bowl. Press into the bottom of a 23 cm (9-inch) springform pan and bake for 10 minutes. Let cool.
- In a large mixing bowl, beat softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Toss diced apples with ground cinnamon and a tablespoon of sugar in a medium bowl. Set aside.
- Fold the cinnamon apples into the cheesecake batter and pour over the cooled crust. Smooth the top with a spatula.
- Bake for 50-60 minutes until edges are set and center is slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool for 1 hour.
- Transfer to the refrigerator and chill for at least 4 hours or overnight. Drizzle with caramel sauce before serving.
