- 3 Tablespoons sour cream
- 1 teaspoon pure vanilla extract
- 1 large egg, at room temperature
- 2–3 Tablespoons salted caramel (for drizzling)
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press into a 9-inch ungreased pie dish and bake for 10 minutes. Let cool slightly.
- To make the streusel topping, combine oats, flour, brown sugar, and cinnamon in a bowl. Cut in cold cubed butter until mixture resembles coarse crumbs. Chill in the fridge.
- In a separate bowl, mix apples with brown sugar, lemon juice, and cinnamon. Set aside.
- For the cheesecake filling, beat softened cream cheese and brown sugar until smooth. Add sour cream, vanilla extract, and egg. Mix until combined without overmixing.
- Spread the cheesecake filling into the cooled crust. Top with the apple mixture and drizzle with salted caramel. Sprinkle the chilled streusel topping over everything.
- Bake at 325°F (163°C) for 45 minutes, covering with foil in the last 10-15 minutes to prevent over-browning. The center should jiggle slightly.
- Cool at room temperature for 1 hour, then chill in the refrigerator for 2 hours or overnight before serving.
