  • 1/2 cup packed light or dark brown sugar
  • 3 Tablespoons sour cream
  • 1 teaspoon pure vanilla extract
  • 1 large egg, at room temperature
  • 23 Tablespoons salted caramel (for drizzling)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press into a 9-inch ungreased pie dish and bake for 10 minutes. Let cool slightly.
  2. To make the streusel topping, combine oats, flour, brown sugar, and cinnamon in a bowl. Cut in cold cubed butter until mixture resembles coarse crumbs. Chill in the fridge.
  3. In a separate bowl, mix apples with brown sugar, lemon juice, and cinnamon. Set aside.
  4. For the cheesecake filling, beat softened cream cheese and brown sugar until smooth. Add sour cream, vanilla extract, and egg. Mix until combined without overmixing.
  5. Spread the cheesecake filling into the cooled crust. Top with the apple mixture and drizzle with salted caramel. Sprinkle the chilled streusel topping over everything.
