Description

Caramel Apple Cheesecake Bars combine creamy cheesecake, sweet caramel, and tart apples, topped with a streusel crumble – perfect for fall or any occasion.

Ingredients

Scale
  • For the crust:
  • 2 cups all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1 cup butter, softened
  • For the cheesecake filling:
  • 3 (8-ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • For the apples:
  • 3 Granny Smith apples, peeled, cored, and finely chopped (about 3 cups)
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • For the streusel topping:
  • 1 cup firmly packed brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup quick cooking oats
  • 1/2 cup butter, softened
  • For the drizzle:
  • 1/2 cup caramel topping (for drizzling after baked)

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine flour and brown sugar. Cut in softened butter to create coarse crumbs. Press mixture into the bottom of a 9×13 inch baking pan. Bake for 15 minutes and let cool.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract until smooth.
  3. Mix apples with sugar, cinnamon, and nutmeg. Set aside.
  4. Pour cheesecake mixture over the crust. Top with spiced apples. In a separate bowl, combine brown sugar, flour, oats, and butter for the streusel. Sprinkle over apples.
  5. Bake for 40-45 minutes until set. Let cool to room temperature and refrigerate for 5 hours.
  6. Drizzle with caramel topping before serving.

Notes

  • Ensure the crust is cooled before adding the cheesecake layer to prevent a soggy bottom.
  • For a gluten-free option, substitute the flour with a gluten-free alternative.
  • Allow bars to cool fully before refrigerating to achieve the best texture.
  • For a dairy-free version, use vegan cream cheese and butter alternatives.
