  • Bell peppers: 1 cup, diced
  • Onion: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Diced tomatoes: 1 can (14.5 oz), drained
  • Cajun seasoning: 2 tablespoons
  • Chicken broth: 2 cups
  • Green onions: 1/4 cup, sliced, for garnish
  • Olive oil: 1 tablespoon
  • Salt and pepper: to taste

Instructions

  1. Gather your ingredients.
  2. In a large skillet, heat olive oil over medium heat and cook the sliced Andouille sausage for 5-7 minutes until browned.
  3. Add diced onion and bell peppers to the skillet and sauté for 3-4 minutes, then add minced garlic and cook for an additional minute.
