Ingredients
- Andouille sausage: 1 lb, sliced into rounds
- Long-grain rice: 1 cup, uncooked
- Bell peppers: 1 cup, diced
- Onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Diced tomatoes: 1 can (14.5 oz), drained
- Cajun seasoning: 2 tablespoons
- Chicken broth: 2 cups
- Green onions: 1/4 cup, sliced, for garnish
- Olive oil: 1 tablespoon
- Salt and pepper: to taste
Instructions
- Gather your ingredients.
- In a large skillet, heat olive oil over medium heat and cook the sliced Andouille sausage for 5-7 minutes until browned.
- Add diced onion and bell peppers to the skillet and sauté for 3-4 minutes, then add minced garlic and cook for an additional minute.
- Stir in uncooked rice and toast for 1-2 minutes, then return the sausage to the skillet.
- Add drained diced tomatoes, Cajun seasoning, chicken broth, and season with salt and pepper. Mix well.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes.
- Once rice is tender, fluff with a fork and garnish with sliced green onions before serving.
