- 2 tablespoons olive oil.
- 2 cloves garlic: Minced.
- 1/2 teaspoon chili flakes: Adjust to taste.

Instructions
- Preheat your oven to 400°F (200°C). Peel and dice the butternut squash, then place it on a baking sheet. Drizzle with one tablespoon of olive oil, and season with salt, pepper, and ground cumin.
- While the squash is roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds. Then add chopped spinach and cook until wilted, seasoning with salt, pepper, and chili flakes.
- Once the squash is roasted, combine it with the sautéed spinach in the skillet. Stir to mix the flavors.
- In a clean skillet, place a tortilla over medium heat. On one half, layer the butternut squash and spinach mixture, then top with shredded mozzarella cheese. Fold the tortilla over to create a half-moon shape.
- Cook the folded quesadilla for about 3-4 minutes on each side until golden brown and crispy. Repeat with remaining tortillas and filling.
- Cut the quesadillas into wedges and serve warm with salsa, guacamole, or sour cream.
