  • 1 medium butternut squash: About 2 cups, peeled and diced.
  • 2 cups fresh spinach: Chopped.
  • 4 large flour tortillas: You can use whole wheat or gluten-free tortillas if preferred.
  • 1 cup mozzarella cheese: Shredded.
  • 1 teaspoon ground cumin.
  • 2 tablespoons olive oil.
  • 2 cloves garlic: Minced.
  • 1/2 teaspoon chili flakes: Adjust to taste.
  • Salt and pepper: To taste.

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and dice the butternut squash, then place it on a baking sheet. Drizzle with one tablespoon of olive oil, and season with salt, pepper, and ground cumin.
  2. While the squash is roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds. Then add chopped spinach and cook until wilted, seasoning with salt, pepper, and chili flakes.
  3. Once the squash is roasted, combine it with the sautéed spinach in the skillet. Stir to mix the flavors.
  4. In a clean skillet, place a tortilla over medium heat. On one half, layer the butternut squash and spinach mixture, then top with shredded mozzarella cheese. Fold the tortilla over to create a half-moon shape.
  5. Cook the folded quesadilla for about 3-4 minutes on each side until golden brown and crispy. Repeat with remaining tortillas and filling.
  6. Cut the quesadillas into wedges and serve warm with salsa, guacamole, or sour cream.
