- 1 teaspoon of garlic powder
- Salt to taste
- 1 tablespoon of olive oil (for roasting)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the cauliflower florets with olive oil, garlic powder, and salt. Toss until evenly coated.
- Spread the seasoned cauliflower florets in a single layer on a baking sheet and roast for about 25-30 minutes, tossing halfway through.
- While the cauliflower is roasting, prepare the avocado crema by mashing the avocado with lime juice and a pinch of salt until smooth.
- Warm the corn tortillas in a dry skillet or oven, then assemble the tacos by placing buffalo cauliflower in each tortilla, topping with avocado crema and chopped cilantro.
