Description

  • 3 large eggs at room temperature

  • 3/4 teaspoon baking powder
  • 2-quart container vanilla ice cream

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9-inch square baking pan with parchment paper, allowing some overhang.
  2. Melt the butter in a microwave-safe bowl or over low heat. Stir in the sugar until well combined and let it cool slightly.
  3. Add the eggs and vanilla extract to the butter mixture and whisk until smooth and creamy.
  4. Stir in the cocoa powder, flour, salt, and baking powder. Mix just until combined.
  5. Spread half the batter evenly in the prepared pan and bake for 15–16 minutes. Let cool for 5 minutes, then lift out using the parchment paper and cool completely.
  6. Repeat the baking process with the remaining batter to create the second brownie layer.
  7. Once cooled, spread softened ice cream over one brownie layer and top with the second layer. Press down gently.
  8. Cover and freeze for 12–18 hours until firm.
  9. Remove from freezer, cut into sandwiches using a sharp knife, and serve immediately.
