- 3/4 teaspoon baking powder
- 2-quart container vanilla ice cream
Instructions
- Preheat oven to 350°F (175°C). Line a 9-inch square baking pan with parchment paper, allowing some overhang.
- Melt the butter in a microwave-safe bowl or over low heat. Stir in the sugar until well combined and let it cool slightly.
- Add the eggs and vanilla extract to the butter mixture and whisk until smooth and creamy.
- Stir in the cocoa powder, flour, salt, and baking powder. Mix just until combined.
- Spread half the batter evenly in the prepared pan and bake for 15–16 minutes. Let cool for 5 minutes, then lift out using the parchment paper and cool completely.
- Repeat the baking process with the remaining batter to create the second brownie layer.
- Once cooled, spread softened ice cream over one brownie layer and top with the second layer. Press down gently.
- Cover and freeze for 12–18 hours until firm.
- Remove from freezer, cut into sandwiches using a sharp knife, and serve immediately.
