Description
Brownie Baked Alaska is a stunning layered dessert that combines a rich, fudgy brownie base, creamy ice cream layers, and a fluffy meringue topping. It’s the perfect showstopper for any occasion, blending warm and cold textures in every bite.
Ingredients
Scale
- Two 1.5 quart containers of ice cream (any flavor)
- Enough brownie batter for a 9-inch pan (homemade or boxed)
- 4 large egg whites, at room temperature
- 1 cup (200g) granulated sugar
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon pure vanilla extract
Instructions
- Let ice cream soften for 10 minutes. Line a 9-inch bowl with plastic wrap, leaving overhang. Spread softened ice cream evenly in the bowl. Cover and freeze at least 8 hours or overnight.
- Preheat oven to 350°F (177°C). Grease and line a 9-inch round cake pan. Prepare brownie batter and pour into the pan. Bake for 32–38 minutes or until a toothpick comes out with a few moist crumbs. Cool completely.
- Place cooled brownie on top of the frozen ice cream layer in the bowl. Cover with plastic wrap and freeze for at least 30 minutes.
- Combine egg whites, sugar, and cream of tartar in a heatproof bowl over simmering water. Whisk until sugar dissolves (2–3 minutes). Transfer to mixer, add vanilla, and beat on high speed until stiff peaks form (4–5 minutes).
- Preheat oven to 450°F (232°C) or use a kitchen torch. Invert the bowl onto a baking sheet and remove plastic wrap. Spread meringue over the entire dessert, creating peaks.
- Toast meringue using a kitchen torch or bake for 4–5 minutes until golden. Slice with a serrated knife and serve immediately.
Notes
- Ensure egg whites and tools are grease-free when making meringue.
- Freeze ice cream and brownie layers completely before assembling.
- Use parchment for easy brownie removal.
- Homemade or vegan substitutions are possible for each layer.
- Serve with fresh berries or sauces for extra flair.
