  • Two 1.5 quart containers of ice cream (any flavor)
  • Enough brownie batter for a 9-inch pan (homemade or boxed)
  • 4 large egg whites, at room temperature
  • 1 cup (200g) granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Let ice cream soften for 10 minutes. Line a 9-inch bowl with plastic wrap, leaving overhang. Spread softened ice cream evenly in the bowl. Cover and freeze at least 8 hours or overnight.
  2. Preheat oven to 350°F (177°C). Grease and line a 9-inch round cake pan. Prepare brownie batter and pour into the pan. Bake for 32–38 minutes or until a toothpick comes out with a few moist crumbs. Cool completely.
  3. Place cooled brownie on top of the frozen ice cream layer in the bowl. Cover with plastic wrap and freeze for at least 30 minutes.
  4. Combine egg whites, sugar, and cream of tartar in a heatproof bowl over simmering water. Whisk until sugar dissolves (2–3 minutes). Transfer to mixer, add vanilla, and beat on high speed until stiff peaks form (4–5 minutes).
  5. Preheat oven to 450°F (232°C) or use a kitchen torch. Invert the bowl onto a baking sheet and remove plastic wrap. Spread meringue over the entire dessert, creating peaks.
  6. Toast meringue using a kitchen torch or bake for 4–5 minutes until golden. Slice with a serrated knife and serve immediately.
