Ingredients
- Flour tortillas: Four large (10-inch) tortillas
- Eggs: Six large eggs
- Bacon: Six slices of bacon
- Shredded cheese: One cup of your favorite cheese
- Diced tomatoes: One cup of fresh diced tomatoes
- Green onions: A quarter cup of chopped green onions
- Avocado: One medium avocado, sliced
- Salt and pepper: To taste
- Olive oil or butter: One tablespoon
Instructions
- Cook the bacon in a large skillet over medium heat for 6-8 minutes until crispy. Remove and crumble.
- In the same skillet, whisk the eggs with salt and pepper, then cook over medium-low heat for 3-4 minutes until softly scrambled.
- Warm the tortillas in a separate pan or microwave for 20-30 seconds. Lay a tortilla flat and add scrambled eggs, crumbled bacon, cheese, tomatoes, green onions, and avocado.
- Optionally, toast the burritos seam side down in the skillet for 2-3 minutes on each side until golden brown and crispy.
- Slice the burritos in half and serve warm with salsa, sour cream, or hot sauce.
Notes
- Avoid overfilling the tortillas to make wrapping easier.
- Always warm the tortillas to prevent cracking.
- Use medium-low heat for cooking eggs to keep them fluffy.
- Season your ingredients for enhanced flavor.
- Let bacon cool before crumbling to avoid greasiness in eggs.
