Instructions
- Preheat your oven to 375°F (190°C) and prepare your muffin tin.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg and mix in the milk, vegetable oil, and vanilla extract until smooth.
- Combine the wet and dry ingredients, stirring gently, then fold in the blueberries.
- Fill the muffin tins with batter, adding a dollop of blueberry jam and swirling it in.
- Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack. Dust with powdered sugar if desired before serving.
