Description

Boo Berry Muffins are a delightful treat that combines the sweetness of blueberries with a soft, fluffy texture, enhanced by a swirl of blueberry jam.

Ingredients

Scale
  • 1 ½ cups all-purpose flour (180 g)
  • ½ cup granulated sugar (100 g)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup milk (120 ml)
  • ¼ cup vegetable oil (60 ml)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (150 g)
  • ¼ cup blueberry jam or preserves (60 g)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the egg and mix in the milk, vegetable oil, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients, stirring gently, then fold in the blueberries.
  5. Fill the muffin tins with batter, adding a dollop of blueberry jam and swirling it in.
  6. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  7. Cool in the tin for 5 minutes, then transfer to a wire rack. Dust with powdered sugar if desired before serving.

Notes

  • Fresh blueberries are preferred, but frozen can be used without thawing.
  • Adjust sugar levels based on your sweetness preference.
  • Consider adding nuts or other fruits for variation.
  • For gluten-free muffins, substitute all-purpose flour with a gluten-free blend.
