Ingredients

  • 200 grams graham cracker crumbs (about 2 cups)
  • 100 grams unsalted butter, melted (about 1/2 cup)
  • 600 grams cream cheese, softened (about 21 ounces)
  • 150 grams granulated sugar (about 3/4 cup)
  • 200 grams sour cream (about 1 cup)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 250 grams blueberries (fresh or frozen)
  • 50 grams powdered sugar (for dusting)
  • Fresh blueberries (for garnish)

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. Combine graham cracker crumbs and melted butter in a mixing bowl and press into the bottom of a 9-inch springform pan.
  3. Bake the crust for about 10 minutes and let it cool completely.
  4. In a large mixing bowl, beat the softened cream cheese until smooth, then add granulated sugar, sour cream, eggs, and vanilla extract, mixing until just combined.
  5. In a small saucepan, cook blueberries and granulated sugar over medium heat for 5-7 minutes, then blend into a smooth puree.
  6. Pour half of the cheesecake filling over the cooled crust, drizzle half of the blueberry puree, and swirl gently.
  7. Pour the remaining filling and repeat the drizzling and swirling with the remaining blueberry puree.
  8. Bake for 50-60 minutes until the edges are set but the center jiggles slightly.
  9. Turn off the oven, crack the door, and let the cheesecake cool for 1 hour.
  10. Cover and refrigerate for at least 4 hours or overnight before serving.
