Description

A delightful dessert that combines rich chocolate with the fresh taste of blueberries, featuring a fudgy brownie base topped with creamy blueberry frosting.

Ingredients

Scale
  • 1 cup (225 g) unsalted butter
  • 2 cups (400 g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 1 cup (90 g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

For the Blueberry Frosting:

  • 1/2 cup (115 g) unsalted butter, softened
  • 2 cups (240 g) powdered sugar
  • 1/4 cup (60 ml) heavy cream
  • 1/2 cup (75 g) fresh blueberries (plus extra for garnish)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch (23×33 cm) baking pan by greasing it lightly and lining the bottom with parchment paper.
  3. In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, salt, and baking powder.
  4. In a medium saucepan, melt the unsalted butter over low heat, then stir in the granulated sugar until well combined. Allow to cool slightly before adding the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Fold in half of the fresh blueberries.
  6. Pour the brownie batter into the prepared baking pan and bake for 25-30 minutes. Check for doneness with a toothpick.
  7. Once baked, let the brownies cool completely in the pan on a wire rack before frosting and serving.

Notes

  • Use fresh blueberries for the best flavor and texture.
  • Adjust the sweetness of the brownies and frosting to your taste.
  • Consider adding nuts or chocolate chips for extra texture.
  • For gluten-free options, substitute all-purpose flour with a gluten-free flour blend.
