  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flours, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat the sugars and eggs until smooth.
  4. Add the oil and vanilla to the egg mixture and mix well.
  5. Fold in the grated zucchini and blueberries.
  6. Combine the wet and dry ingredients until just mixed.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes until a toothpick comes out clean.
