Description

Blueberry muffins topped with streusel are soft, fluffy, and bursting with fresh blueberries. A sweet, crunchy treat for breakfast or dessert.


Ingredients

  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries (or frozen)
  • 1/2 cup all-purpose flour (for streusel topping)
  • 1/3 cup brown sugar, packed (for streusel topping)
  • 1/4 teaspoon cinnamon (for streusel topping)
  • 1/4 cup unsalted butter, softened (for streusel topping)

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin pan with paper liners or grease lightly.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk egg, buttermilk, butter, and vanilla. Add wet ingredients to dry ingredients and stir gently until combined. Fold in blueberries.
  3. In a separate bowl, combine flour, brown sugar, and cinnamon for the streusel. Add softened butter and mix until crumbly.
  4. Divide muffin batter evenly into muffin pan. Sprinkle streusel topping over each muffin.
  5. Bake for 15-20 minutes, until a toothpick inserted comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Avoid overmixing the batter to keep muffins light and fluffy.
  • Use fresh blueberries for the best flavor, but frozen can also work.
  • For a brighter flavor, add lemon zest to the batter.
