- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup buttermilk
- 2 cups fresh blueberries (or frozen)
- 1 teaspoon vanilla extract (optional)
Instructions
- Preheat the oven to 375°F (190°C). Grease the muffin tin or line with paper liners.
- In a large mixing bowl, combine the flour, sugar, salt, baking powder, and baking soda.
- In another bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract.
- Combine the wet ingredients with the dry ingredients, stirring until just combined. Do not overmix.
- Gently fold in the blueberries.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overmix the batter to prevent dense muffins.
- If using frozen blueberries, there’s no need to thaw them.
- Measure flour accurately to avoid dry muffins.
