Description

Ingredients

  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 2 cups fresh blueberries (or frozen)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease the muffin tin or line with paper liners.
  2. In a large mixing bowl, combine the flour, sugar, salt, baking powder, and baking soda.
  3. In another bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients, stirring until just combined. Do not overmix.
  5. Gently fold in the blueberries.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Do not overmix the batter to prevent dense muffins.
  • If using frozen blueberries, there’s no need to thaw them.
  • Measure flour accurately to avoid dry muffins.
